Recipe Ingredients for Panna Cotta With Raspberry Coulis

1 cups raspberries
1/8 cup sugar
1/2 teaspoon fresh lemon juice
1/3 cup skim milk
1/4 ounce flavorless gelatin
1 1/2 cups fat free half & half
1 cup heavy cream
1/2 cup white sugar
1 1/2 teaspoons vanilla extract

Recipe Directions for Panna Cotta With Raspberry Coulis

  1. Pour milk into a small bowl, and stir in the gelatin powder. Set aside.

  2. In a saucepan, stir together the heavy cream and sugar, and set over medium heat. Bring to a full boil, watching carefully, as the cream will quickly rise to the top of the pan. Pour the gelatin and milk into the cream, stirring until completely dissolved. Cook for one minute, stirring constantly. Remove from heat, stir in the vanilla and pour into six individual ramekin dishes.

  3. Cool the ramekins uncovered at room temperature. When cool, cover with plastic wrap, and refrigerate for at least 4 hours, but preferably overnight before serving.

  4. In a medium saucepan over medium-high heat, bring raspberries and 1/2 cup sugar to a boil. Reduce heat and simmer, stirring occasionally, until mixture starts to thicken, about 15 minutes.

  5. Press mixture through a fine-mesh strainer, using a spatula to extract as much liquid as possible. Discard seeds and skins. Stir in 1 tbsp. lemon juice. Taste and add more sugar or lemon juice if you like. Serve coulis warm or at room temperature.
