Recipe Ingredients for Panko Parmesan Chicken

1 2/5 lb boneless skinless chicken breasts
2 cloves garlic
1/4 cup plain bread crumbs (or use 1 cup panko to achieve same nutrition info)
1 1/2 T dried parsley
1 salt
1 pepper
2 oz hard parmesan cheese, grated
504 g (2 cup) hunt's spaghetti sauce roasted garlic and onion
3 T oil
2 egg whites

Recipe Directions for Panko Parmesan Chicken

  1. Cut chicken into 3 filets and pound thin.

  2. Make breading by combining panko, garlic, salt, pepper, parsley, and 1 oz parmesan cheese in a dish.

  3. Place egg whites in seperate dish.

  4. Heat 1 T oil on pan.

  5. Salt and pepper chicken breasts. Dredge in egg whites and then in panko mixture.

  6. Place 3 filets in pan. Cook over med-hi heat until browned (5 minutes). Turn and add .5 T oil. Cook an additional 5 min. Remove and repeat with other three chicken filets.

  7. Place .75 cup sauce in bottom of baking dish. Place chicken filets in pan. Drizzle remaining sauce over the chicken and top with remaining 1 oz parmesan cheese.

  8. Bake at 350 until sauce bubbles.
