Delicious flounder recipe - slightly indulgent. I usually use 2 flounder fillets. Really easy recipe.

Recipe Ingredients for Panko crusted Flounder

1/2 pound flounder
1/4 cup panko bread crumbs
1/8 cup mozzarella cheese
1 tablespoon butter
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon basil

Recipe Directions for Panko crusted Flounder

  1. Preheat oven to 375 degrees.

  2. Season each flounder fillet on both sides with salt and black pepper and place on parchment paper on a baking sheet. Set aside.

  3. To prepare the topping, combine bread crumbs, mozzarella cheese, butter, olive oil, salt, black pepper and basil. Butter should be slightly softened. If topping appears too dry, add more olive oil.

  4. Spread topping on top of flounder and bake for 10-15 minutes or until fish is flaky. Serve with lemon wedges.
