Recipe Ingredients for Panfried Pork Dumplings

2 cups all-purpose flour
2 cups whole wheat pastry flour
2 cups boiling water
8 oz napa cabbage
3 tsp salt, divided
1 lb ground pork
1/4 cup scallions
1 tbsp white wine
1 tsp cornstarch
1 tsp sesame oil
1 dash white pepper

Recipe Directions for Panfried Pork Dumplings

  1. make dumpling dough by combining water and flour until a soft dough forms. knead dough on floured surface for five minutes or until smooth and elastic. divide dough into 48 even sized pieces and set aside under plastic wrap.

  2. slice cabbage into thin strips and place in a bowl with 2 tsp salt. set aside for 5 minutes. ring out cabbage using cheese cloth or clean tea towel. extract as much moisture as possible.

  3. place cabbage back in bowl and add all other ingredients. mix well

  4. roll out dough into even circles. place 1 tbsp of pork mixture into center and pinch closed. left overs can be freezed for another time.
