Recipe Ingredients for Pandebono FAT FREE (Colombian Cheese Bread)

2/3 cup tapioca starch
1/4 cup Corn Flour, Masa, Enriched
12 ounces Fat Free Mozzarella Cheese
1 egg
2 tablespoons water

Recipe Directions for Pandebono FAT FREE (Colombian Cheese Bread)

  1. Pre-heat oven to 400

  2. In a food processor, place the tapioca starch (yuca flour), cheese and corn flour (masarepa) : Process until well combined. Add the well beaten egg slowly while food processor is running.

  3. Add enough water to make the dough form a ball and circle the processor bowl as in making pie crust.

  4. Roll the dough into a long round shape about 8" long, divide this into 8 equal parts then divide into 16 parts.

  5. Shape into balls by rolling between palms of hand and slightly flatten, place on a baking sheet lined with parchment paper and bake 15-17 minutes or until golden on top.

  6. Remove from oven and eat while warm.

  7. Warm up in microwave after they are cold.
