Pandan leaves are great for wrapping around chicken to keep it moist and tender!

Recipe Ingredients for Pandan Chicken

2 Serving Chicken
1 1tsp Oil, Sesame
1 tbsp Soy Sauce
1/4 cup Coriander Leaves
4 clove Garlic
1 tbsp Coconut Palm Sugar
4 wedge yields Lime Juice

Recipe Directions for Pandan Chicken

Cut chicken into small chunks. In a mortar and pestle grind together garlic, ginger, coriander root. Add juice of 1 lime,palm sugar, soy and sesame oil. Pour this sauce over chicken and marinate for an hour. Preheat oven to 200C. Wrap pandan leaves around a couple pieces of chicken( you can go online and find videos of how to wrap properly). Then put in a baking dish and bake until cooked around 20 min.
