This is a great Filipino dish- it is supposed to contain fish sauce but I choose not to use that because I'm vegan. It's delicious though!

Recipe Ingredients for Pancit Variation

8 ounces bean thread noodles
1 tbsp vegetable oil
1 cup carrots, shredded
1 cup celery, diced
1/2 cup onion, diced
1 cup snap peas
1/4 cup scallions, sliced thinly
1 cup water
1/2 tblsp lemon juice

Recipe Directions for Pancit Variation

  1. Soak bean thread noodles to soften

  2. Sautee with other ingredients until reduced.

  3. Enjoy!
