Scratch pancakes - not a mix (I can't digest buttermilk)

Recipe Ingredients for Pancakes

1 1/3 cups white flour
3 tsps baking powder
1/2 tsp salt
3 tbsps sugar
1 egg
1 1/4 cups skim milk
3 tbsp canola oil
1/4 tsp vanilla

Recipe Directions for Pancakes

Stir flour, baking powder, salt and sugar together. Beat eggs thoroughly; add milk. Make a well in centre of dry ingredients, slowly add egg-milk mixture with oil and vanilla. Stir quickly until ingredients are just mixed and batter is still lumpy. Drop by 1/4 cupfuls on hot griddle. Cook the pancakes until they are filled with bubbles and the under surface is golden brown. Turn and brown the other side. Do not turn the pancakes more than once during cooking.
