Found this recipie in Better Homes & Gardens 1968 cookbook. I doubled it for our family. Rave reviews!!!

Recipe Ingredients for Pancakes

2 1/2 cups All-Purpose Flour
6 tbs Baking Powder
2 tbs Sugar
1 tsp Salt
2 eggs, beaten
2 1/2 cups Fat Free Milk
4 tbs Olive Oil

Recipe Directions for Pancakes

  1. Sift together dry in gredients

  2. Combine egg, milk, vanilla, and olive oil

  3. Add wet ingredients to dry ingredients, stirring just till moistened.

  4. Bake on hot griddle

  5. Makes about 16 4-inch pancakes
