I make my pancakes from scratch because it's not that difficult and I can split the flour recommended into store bought flour and self-made oat flour (yum!). Also, package the leftovers in separate 1-serving baggies and you've got a very quick breakfast option. My picky toddler loves them too!

Recipe Ingredients for Pancakes

2 medium eggs
1 cup flour
1 cup oatmeal
1 1/2 cups milk
4 tbsp Smart balance light
2 tbsp sugar
6 tsp baking powder
1 tsp salt

Recipe Directions for Pancakes

  1. If you don't have oat flour, pour 1 cup of regular oatmeal into a food processor or blender and grind it up into a powder.

  2. whisk all ingredients together in a bowl

  3. Use a spoon to drop batter onto heated frying pan; circles should be no more than 2-3 inches diameter

  4. Serving size is 2-3 cakes.
