Homemade pancakes, according to Cooks Illustrated recipe. For a larger batch, use 1 egg and 1 egg white rather than 2 eggs.

Recipe Ingredients for Pancakes

1 cup flour
2 tbsp sugar
2 tsp baking powder
1/8 tsp salt
1 egg
1 cup milk
2 tbsp butter, melted

Recipe Directions for Pancakes

  1. Mix the dried ingredients together.

  2. Melt the butter, cool slightly.

  3. Mix egg and milk together.

  4. Pour melted better into milk/egg mixture, forming clumps.

  5. Pour liquids onto dry ingredients, stirring ONLY until incorporated.
