Delicous pancakes from The Joy of Cooking, 24th printing. My family loves to put fruit in them. The fruit is completely optional. I just estimated a cup of blueberries; you can use as many as you want. My family loves the fruit so I included it in the nutrition facts.

Recipe Ingredients for Pancakes

1 1/2 cups all-purpose flour
1 teaspoon salt
3 tablespoons sugar
1 3/4 teaspoons double-acting baking powder
2 whole eggs
3 tablespoons butter, melted
1 1/4 cups milk
1 banana, sliced
1 cup Blueberries

Recipe Directions for Pancakes

  1. Sift the flour before measuring. Resift with the salt, sugar, and baking powder.

  2. In a separate bowl, combine the eggs (slightly beaten), butter, and milk.

  3. Mix the liquid ingredients quickly into the dry ingredients.

  4. If your going to put fruit in, put your slices (or berries, etc...) on the pancake right before flipping, when the pancake has little craters in it.

  5. The number of pancakes varies.We had some really big and some pretty small ones. Most we're probably about 3 to 4 inches in diameter.
