Me and Aub tossed these together one day and they were awesome. A good variation is to add 3/4 cups chopped nuts or fruit.

Recipe Ingredients for Pancakes

2 cups flour
1/2 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup water
1/4 cup canola oil
1 1/2 cup vanilla soy milk
1 tsp vanilla extract

Recipe Directions for Pancakes

  1. Heat a skillet and add a tsp of oil so the pancakes won't stick.

  2. Sift together dry ingredients. In a small bowl whisk together wet ingredients. Pour wet into dry and mix, a few lumps are okay. Pour battle onto skillet and cook until bubbles form on the surface and start to pop, then flip pancake and cook on other side until both sides are golden. Makes about 8 pancakes with 2 being a serving.
