Vegan Pancakes base on the VWaV cookbook's Plain Pancake Recipe

Recipe Ingredients for Pancakes

1 1/4 cups unbleached flour
2 tbls baking powder
1/2 tbls cinnamon
1/3 cup water
1 1/4 cup soy milk
2 tbls canola oil
2 tbls maple syrup
1 tsp vanilla extract

Recipe Directions for Pancakes

  1. Heat skillet to medium-high or about 300 degrees (oil if it is not a non stick surface)

  2. Sift together the dry ingrediants in a mixing bowl

  3. Add the liquids an mix. Be careful not to overmix, some lumps are good.

  4. Use a serving spoon or other large spoon to pour the mix onto the hot skillet. Flip over when the air bubbles have begun to pop and the top looks like it is drying (about 3 - 4 minutes). Let cook for another couple minutes until both sides are golden brown.
