Makes 1 serving



Quick, easy breakfast. Adapted from full fat and sugar recipe. It still has the butter, but I replaced some of the flour and removed the egg yolk, sugar, and full-fat buttermilk. The flax seed was just for a boost and the orange peel (which I used dried from a spice jar) makes it pop a little. These are optional. For a special breakfast, a few pinches of mini chocolate chips caps it off.

Recipe Ingredients for Pancakes

2 t. butter
6 T. skim milk
1 T. splenda granular
3/8 t. baking powder
0.06 t. salt
1/8 t. baking soda
1 egg white
1/4 t. vanilla
1 t. ground flax seed
1/4 t grated orange peel
3 T. white flour
3 T. whole wheat flour

Recipe Directions for Pancakes

Mix all ingredients. Ladle into hot, greased skillet. Cook until no longer liquid in center.
