Yummy, moist and fluffy pancakes. A nice indulgence.

Recipe Ingredients for Pancakes

1 cup flour
2 tsp sugar
1/4 tsp salt
1/2 tsp baking powder
1 cup non fat milk
1 large egg, separated
2 tbsp melted butter

Recipe Directions for Pancakes

Mix dry ingredients and set aside. Whisk milk and egg white and set aside. Mix egg yolk and melted butter then add to milk mixture. Whisk until frothy. Pour milk mixture into dry ingredients and just whisk enough until everything is incorporated - it is very important not to over whisk or the pancakes will be very tough and gummy. Heat pan to 350 degrees (you know the pan is properly heated when you splash a teaspoon of water in the pan and the water "dances" around). Spray pan with non stick cooking spray. Measure out 1/4 cup of batter and pour into pan. When bubbles form and pop on the surface, flip. Cook until golden brown.
