Recipe Ingredients for Pancakes (Kittencal's)

4 cups flour
2 tablespoons baking powder
2 teaspoons salt
3 cups milk
4 eggs
2/3 cup pancake syrup
1 cup butter, melted
2 teaspoons cinnamon (can use more)

Recipe Directions for Pancakes (Kittencal's)

  1. NOTE: Good to allow time to refrigerate batter for 1/2 hour before cooking.

  2. In a bowl, combine flour, salt, and baking powder (combining separately helps the pancakes be fluffier).

  3. In a mixing bowl, combine the milk, eggs, syrup, melted butter, and cinnamon. Beat on low speed until combined (about 2 minutes). Don't overbeat.

  4. Add the flour mixture and hand stir just blended. (Again, don't overmix -- batter will be thick and some lumps are okay.)

  5. Refrigerate batter for 1/2 hour if time allows.

  6. Pour by 1/4-cup servings (or ladle) onto a preheated greased griddle. (For perfect circles, try using a turkey baster to squeeze batter onto pan. Can squeeze into shapes/letters.)
