Recipe Ingredients for Pancakes with Cottage Cheese and Fruit

2 cups low-fat cottage cheese
2 eggs
1/2 cup whole-wheat flour
1 cup unbleached white flour
1 1/2 tbsp canola oil
2 tbsp brown sugar
136 g (1/2 cup) Smucker's sugar-free blackberry jam (95138)
1/2 cup blackberries, fresh or frozen, thawed (or any other berry)

Recipe Directions for Pancakes with Cottage Cheese and Fruit

  1. Mix the cottage cheese in a blender until smooth. Combine all ingredients except the jam and fruit in a bowl, add the cottage cheese, and mix until blended.

  2. Cook on a nonstick griddle over medium heat until browned on both sides, about 5-7 minutes.

  3. Meanwhile, heat the jam in a saucepan until melted. Add the fruit and heat for 2 minutes. Pour over hot pancakes to serve.
