1 1/3 cups flour
3 tsp baking powder
1/2 tsp salt
3 tbsp sugar
1 egg
1 1/4 cup milk
3 tbsp butter, melted
1/4 tsp vanilla
1/2 tsp cinnamon
1/4 tsp nutmeg

Recipe Directions for Pancakes - classic Five Roses Cookbook

  1. Stir flour, baking powder, salt and sugar together.

  2. Beat egg thoroughly; add milk.

  3. Make a well in the center of dry ingredients.

  4. Slowly add egg-milk miture.

  5. Add melted butter and vanilla (and cinnamon and nutmeg).

  6. Stir quickly until ingredients are just mixed and batter is still lumpy.

  7. Drop by 1/4 cupsfuls on hot pancake griddle.

  8. Cook pancakes until they are filled with bubbles and the under-surface is golden brown.

  9. Turn and brown the other side.

  10. Server as hot as possible with syrup, honey, jam or jelly, bacon or sausages.

  11. Do not turn pancakes more than once.
