Pancake Puffs Recipe

Pancake Puff (griddle pan) batter light and fluffy, similar to crepe batter, but a little thicker... Adding the powdered sugar to the batter eliminates the desire to add syrup I often use low fat butter/marg or cooking spray to cut calories and fat too... The kids love them.

Recipe Ingredients for Pancake Puffs

1 cup whipping cream
1 cup flour
1 tablespoon powdered sugar
1 teaspoon salt
2 eggs
1 tablespoon butter

Recipe Directions for Pancake Puffs

  1. whip the cream lightly to loosen it up, but not to "whipped" consistancy

  2. add eggs, flour, salt and butter, mix

  3. add powdered sugar, mix

  4. heat griddle (flat grill pan for standard pancakes)

  5. or pancake puff skillet

  6. use 1/3 cup ladel / scoop for each pancake...

  7. enjoy...

  8. one serving is approximately 3 puffs / pancakes.
