Simple pancake with an accompanying sauce.

Recipe Ingredients for Pancake with peanut butter sauce

140 g plain flour
300 ml milk
1 large egg
1/4 tsp baking soda
1 tbsp vegetable oil
20 g smooth peanut butter
60 g fruit yoghurt

Recipe Directions for Pancake with peanut butter sauce

  1. I use this recipe for one extra large (12 inch diameter) pancake about 5 mm thick. Any fruit yoghurt is good, I like banana or strawberry.

  2. Combine the top 4 ingredients in a bowl and whisk well.

  3. Pour 1 tbsp of oil into an extra large non-stick pan, and spread around evenly with a pastry brush or spatula. Heat the oil just a little to ensure it's covering the pan evenly.

  4. The mix should be easy to pour, about the consistency of whole cream. Pour the entire mixture into the warm pan and leave on a medium flame.

  5. The pancake is ready to flip when a little air builds up underneath and the topmost surface is a faint yellowish tan colour and there are no wet patches.

  6. Wiggle the spatula under one edge, then swiftly push it towards the middle, and flip the pancake over. Leave it to cook for 3-5 minutes more. You shouldn't need the spatula to remove it from the pan, just tip it on to a plate.

  7. Either combine the last two ingredients in a small bowl and spread over the pancake, or, just place them in the center of the pancake and fold it over, then mix up the ingredients and spread it out as you eat.
