Recipe Ingredients for Pancake Add-ins

1 cup, pieces or slices Mushrooms
1 medium raw Carrots
0.5 medium (2-1/2" dia) Onions
1/2 cup Tomatoes Mexican Diced with Jalapenos Bell Peppers and Spices
1 cup Spinach
1 oz Pepper Jack Cheese
0.5 tbsp Olive Oil

Recipe Directions for Pancake Add-ins

  1. Saute onion and carrot in olive oil until softened

  2. add mushrooms

  3. add corn and tomatoes

  4. add spinach, allow to wilt

  5. mix w/ pancake batter

  6. fold in grated pjack cheese
