probably not too authentic, but it tastes yummy!! You can add more curry if you like more heat and reduce the coconut milk by 1 can. If it is too spicy, you can add more coconut milk (but the calories will increase!). The original recipe calls for 1 tsp sugar, but I omitted it as I am on a sugar free challenge!

Recipe Ingredients for Panang-ish Curry

1 cup red bell pepper
15 oz baby corn
8 oz bamboo shoots
42 oz coconut milk
1 lb chicken breasts
2 tbsp curry paste
1 cup straw mushrooms
14 oz chicken broth
1 tbsp fish sauce
1 tbsp olive oil

Recipe Directions for Panang-ish Curry

  1. Slice red pepper into thin slices.

  2. Slice chicken into thin slices (it helps to freeze a few minutes first)

  3. Heat oil in large dutch oven. Add 2-4 tbsp of curry paste to oil and cook about 2 minutes, stirring constantly. Add Chicken and cook 3-4 minutes. Add 1 can of coconut milk & bring to boil. Add chicken broth & bring to boil. Add 2nd can of coconut milk & bring to boil. Add fish sauce & sugar. Add veggies (minus the mushrooms), reduce heat to med/low and cook 15 minutes. Add mushrooms, simmer on low for 10 minutes. Serve over rice!
