Thai food is one of my favorites. I love to find any way possible to make it at home to cut the expense of dining out.

Recipe Ingredients for panang curry

2 tbsp. panang curry paste
1 cup chicken breast, diced
1 c. coconut milk
1/2 c. onion, sliced
1/4 c. bamboo shoots
1/4 c. red pepper, diced

Recipe Directions for panang curry

  1. Heat the paste in a sauce pan briefly, then add the can of coconut milk.

  2. When it comes to a boil, add the chicken and cook for about 5 min or so, until chicken is cooked.

  3. Add the veggies. Cook until veggies are done.

  4. serve over rice.
