Recipe Ingredients for Pan-Seared Turkey Breasts w/ Creamy Mushroom Sauce

2 serving Boneless Skinless Turkey Breast
16 oz Mushrooms
0.25 cup Oikos Organic Greek Yogurt
3 tsp Classic Dijon Mustard
0.33 tablespoon Organic Butter
1 tbsp Extra Virgin Olive Oil
6 tbsp chopped Shallots
0.5 tsp Kosher Salt
2 fl oz Organic Low Sodium Chicken Broth
1 tablespoon Sage
4 clove Garlic

Recipe Directions for Pan-Seared Turkey Breasts w/ Creamy Mushroom Sauce

  1. Preheat oven to 325 F. Pierce breasts with a fork about 5 or 6 times in the thickest part of the meat. Salt chicken breasts on each side with 1/4 tsp per breast. Place on an oven-proof plate and cover tightly with foil. Cook in the oven for about 30-40 minutes until internal temp between 145-150 F.

  2. Place breasts on towel and dab with paper towel to dry off. Heat olive oil and butter in pan on medium heat. Add turkey breasts and cook about 4 minutes per side, or until golden brown. Remove from pan and set aside.

  3. To the same pan, add shallots and any liquid collected in the roasting plate and cook for 2 minutes until opaque. Add mushrooms to pan and cook until most of the liquid is evaporated.

  4. Mix sage, yogurt, and mustard and set aside.

  5. Add broth as needed to loosen bits from the bottom of the pan. Once most of the liquid has evaporated (at least 10 minutes), add garlic for about 1 minute until fragrant.

  6. Add about 1/2 cup of pan mixture to yogurt mixture and combine. Pour mixture into the pan, and stir until all is combined.

  7. Return breasts to the pan and spoon sauce over the top. Serve!
