Thanks to a food blog with a scientific approach to cooking all sorts of foods, I developed this recipe based on the fact that 1. You should salt meat at least 40 mins prior to cooking, and 2. pan searing in olive oil provides better taste than butter or combo of oil and butter. The end result is meat that nearly tastes like bacon but still retains all the flavor of the meat. And you can use this method on any steak - the best results are actually with rib-eyes, but the strip steak is slightly leaner. The smoked paprika gives it a smoky - but not overwhelmingly so - flavor and the sage enhances savory notes in the beef. This is a great treat - even a double serving won't completely undo your efforts if you don't over do your sides!

Recipe Ingredients for Pan Seared Strip Steak - Best Cooking method EVER

1.11 lbs Strip Steak
1 1/2 tbsp olive oil
1 tsp salt
1/2 tsp paprika, smoked
1/4 tsp ground sage

Recipe Directions for Pan Seared Strip Steak - Best Cooking method EVER

  1. Salt both sides of each steak and place on a plate. Leave on the counter, uncovered, for 45-50 mins.

  2. At the end of the resting time, heat 1/2 tbsp olive oil in a large skillet - cast iron or non-stick or whatever, doesn't really matter.

  3. Turn the heat up almost as high as it goes.

  4. Put steak in pan.

  5. Flip steaks about every 15-20 seconds. Brush remaining olive oil on as you flip.

  6. Keep doing this until the steak is cooked through the inside to your liking. This varies depending on your personal preference and thickness of the steak.

  7. Add paprika and sage to one side of the steak.

  8. Flip a couple more times, about every 3-5 seconds, and rub the steaks around in the pan to evenly distribute the sage and paprika.

  9. Serve immediately, especially if you like your steak a little rare.
