A fast, fresh and delicious way to liven up fish night. Easy to make and rich in vitamins and those healthy fats that enable us to maintain a normal blood sugar level.

Recipe Ingredients for Pan Seared Sea Bass with Citrus and Avocado

2 oranges
2 cup Pink Grapefruit
1/2 tsp sea salt
1/2 tsp pepper
24 oz Sea Bass, Mixed Species 1 inch thick
1 tablespoon grapeseed oil
1 avocado,+NS+as+to+Florida+or+California avacado
4 tablespoons avocado oil
2 tablespoons chopped cilantro or parsley

Recipe Directions for Pan Seared Sea Bass with Citrus and Avocado

  1. Preheat oven to 450

  2. Peel fruit and working over a bowl cut pith from fruit and cut between membranes to release fruit segments into bowl. Squeeze in juices from the skin reserving 1/2 of juice in bowl. Season with half the salt and pepper. Pat dry fish and season with other half of salt and pepper. Heat ovenproof sklllet over high heat with grapeseed oil. Add fish and sear without moving for 4 - 5 minutes before turning. Transfer to heated oven and continue to roast until opaque inside about 30 minutes.

  3. Divide fruit and wedges of avocado on four plates. Top with fish fillets. Spoon citrus juice over all. Drizzle each plate with avocado oil. Sprinkle with cilantro or parsley and serve.
