Recipe Ingredients for Pan seared scallops in Wine reduction

200 g scallops
1 T butter
1 T olive oil
2 T Shallots, chopped
1/2 t Dijon Mustard
1/4 cup white wine

Recipe Directions for Pan seared scallops in Wine reduction

  1. Pat scallops dry, salt and pepper to taste, heat oil and butter in non stick pan. when a water drop sizzles place scallopps and sear making sure there is plenty of room separating and do no disturb until browning on the sides (Important) sear for 2 minutes and turn over to sear other side. Remove and keep warm.

  2. Remove pan from heat add shallots, mustard, stir in wine and loosen bits from pan return to heat nd stir as sauce thicken. Return scallops and toss to warm serve over linguini.
