Very good accompanied with a sweet, spicy chutney of your choice. Rub with sesame oil in place canola oil for additional sesame flavor.

Recipe Ingredients for Pan-Seared Salmon w/ Sesame Seed Crust

1 tsp. sesame seeds
1 oz. salmon fillet
1 salt
1 pepper
3 tsp. canola oil

Recipe Directions for Pan-Seared Salmon w/ Sesame Seed Crust

Heat heavy skillet over high heat. Spread sesame seeds on a plate. Rub salmon fillet with 1 tsp. oil. Sprinkle with salt and pepper, then press flesh side of salmon in sesame seeds to coat. Add remaining oil to pan: When oil shimmers, add fillet, skin side down and cook until skin side is well browned and bottom half of fillet turns opaque, 4 1/ 2 minutes. Turn and cook seeded side about 3 to 3 1/2 minutes, or until no longer translucent on the outside, but firm when pressed. Pat excess oil with a paper towel. Serve immediately.
