Pan Seared Salmon with Horseradish mayo

Recipe Ingredients for Pan Seared Salmon with Horseradish mayo

6 oz Salmon, Atlantic, Wild
1 tbsp olive oil
1 tsp garlic salt
1 tsp pepper
1 tbsp mayonaise
1 tbsp dijon mustard
1/2 tbsp prepared horseradish
1/2 tbsp dill weed
10 Asparagus spears
1/2 tbsp olive oil
1/2 tsp garlic salt
1/2 tsp pepper

Recipe Directions for Pan Seared Salmon with Horseradish mayo

In a medium pan, heat olive oil over medium-high heat until good and hot (not smoking). Sprinkle garlic salt and pepper to coat salmon. Place salmon in pan with skin side up for 1-2 minutes (the idea is to pan sear the top of the salmon). Flip salmon skin side down and cook for another 1-2 minutes. Remove salmon and place on a hot (low heat) grill and let it cook for another 3-5 minutes (depending on thickness of salmon and desired temperature). Cut 1 inch off the bottom of asparagus stalks and discard. Coat asparagus in olive oil, just enough to cover asparagus, discard excess oil. Sprinkle garlic salt and pepper on asparagus. Place asparagus on baking sheet and cook under broiler for 3-5 minutes (depending on thickness of asparagus). Check Asparagus often, it should be tender if poked with a fork or knife, but not wilted.
