Recipe Ingredients for Pan Seared Australis Barramundi with Maple Sweet Mashed Potatoes and Apple Cider Reduction

2 lbs. sweet potatoes, peeled
1/2 tsp salt
1 pinch white pepper
1/4 cup fat-free half and half
2 tbsp butter
1 tsp pure maple syrup
2 cups apple cider
1 g (1) cinnamon stick
1 tbsp cold butter
12 oz. salmon fillets (or barramundi)
1 Salt
1 Pepper
1 cup flour (to dredge)
1 tbsp olive oil

Recipe Directions for Pan Seared Australis Barramundi with Maple Sweet Mashed Potatoes and Apple Cider Reduction

  1. For the potatoes: In a heavy sauce pan boil sweet potatoes in a quart of water until tender. Drain the water completely and then add cream, maple syrup and butter. Mix until completely incorporated and season with salt and white pepper.

  2. For the apple cider reduction: In a sauce pan add apple cider and cinnamon stick and bring to a boil. Reduce heat and simmer until the apple cider has reduced to about half a cup. Remove cinnamon stick.

  3. Continue to reduce the cider reduction and turn down the heat. Add the cold butter slowly and incorporate until slightly thickened. Do not bring to a boil or the sauce will break.

  4. For the fish: Season the barramundi fillets with salt and pepper and then lightly dust with flour. In a non-stick sauté pan heat the olive oil over medium and add the fillets flour side down. Cook for about 4 minutes or until golden brown. Turn over fillets and cook another 3 to 4 minutes to finish. Take the fillets out of the pan and hold aside.

  5. To Serve: On a large dinner plate place a scoop of sweet potatoes, add one fillet of Barramundi and sauce with apple cider reduction. Serve immediately.
