Recipe Ingredients for Pan sauce for steak

3 tbsp shallot, finely minced
1 cup low-sodium chicken broth
1 cup dry red wine
1 tablespoon dijon mustard
1 tablespoon minced parsley
2 tablespoons unsalted butter
1 teaspoon lemon juice
1 Salt and pepper to taste

Recipe Directions for Pan sauce for steak

  1. After searing off the steaks, sautee the shallots briefly in the same pan.

  2. Add stock and stir to de-glaze.

  3. Add wine and dijon, then reduce to about 1/3 cup.

  4. Pull off heat, add parsley and lemon juice.

  5. Mount the sauce with butter, and season to taste.

  6. Pour over rested steaks.
