4 oz chicken breast
2 oz Farro
2 oz Fresh Peas
2 Baby Artichokes
2 oz chicken stock
1/2 oz Golden Raisins
1/2 oz salt
1/2 oz sunflower oil

Recipe Directions for Pan Roasted Chicken Breast, Farro Salad, Baby Artichokes, Pickled Raisin,Jus

  1. Cook Farro until al dente (about 20 minutes) in a large pot of salted water

  2. Season Chicken

  3. Brown Chicken Breast on all sides

  4. Finish cooking chicken in 450 degree oven

  5. Meanwhile add blanched peas (fiddlehead ferns) to farro and season appropriately

  6. Halve fabricated and braised (mirepoix, herb, white wine, chicken stock) artichoke hearts

  7. Deglaze chicken fond with chicken stock, reduce, emulsify with butter, season

  8. Plate - Fiddlehead Farro Salad, Chicken on top, artichokes around, finish with pan sauce and raisins (pickled)
