Herbed omelet with sausage, potatoes and vegetables

Recipe Ingredients for Pan Omelet

2 cups frozen hash brown potatoes
4 eggs
1/2 cup shredded cheddar cheese
1/2 onion chopped
1/2 red bell pepper
1/8 teaspoon thyme
1/8 teaspoon dill weed
4 oz turkey kielbasa
1 tablespoon vegetable oil

Recipe Directions for Pan Omelet

  1. Chop ingredients

  2. Add oil and hash browns to skillet

  3. After a few minutes add vegetables

  4. Cover, stir occasionally

  5. Beat eggs

  6. When cooked items browned, turn off heat, pour over beaten eggs, cover and let sit till eggs are cooked

  7. Sprinkle cheese over omelet

  8. Serve
