Recipe Ingredients for Pan-glazed chicken with basil

16 ounce chicken breast halves, skinned
1/2 tsp salt
1/4 tsp fresh pepper, ground
2 tsp olive oil
2 tbsp balsamic vinegar
1 tbsp honey
2 tbsp fresh basil, chopped
10 ounces broccoli
14 1/4 ounces fat-free, reduced sodium chicken broth
1 cup couscous, uncooked

Recipe Directions for Pan-glazed chicken with basil

  1. Sprinkle both sides of chicken with salt and pepper. Heat oil in a large non stick skillet over medium-high heat. Add chicken; cook 5 minutes or until lightly browned. Turn chicken and cook 6 minutes or until chicken is done. Stir in vinegar, honey and basil; cook 1 additional minute.

  2. Steam the broccoli. Combine the broth, 1/2 tsp salt and 1/4 tsp pepper in a medium saucepan; bring to a boil. Add the couscous and broccoli to broth. Cover, remove from heat and let stand 5 minutes or until liquid is absorbed. Fluff with a fork.
