Recipe Ingredients for Pan Fried Chicken Breasts with Lemon Thyme Sauce

2 tbs olive oil
2 breasts chicken
1/2 tsp salt
1/4 tsp pepper
3 tbs onion, diced
1 cup lowfat chicken broth
1 tbs lemon juice
1 tsp fresh thyme, chopped

Recipe Directions for Pan Fried Chicken Breasts with Lemon Thyme Sauce

  1. Pound chicken breasts evenly to 1/4 inch thickness. Heat olive oil over med-high heat. Sprinkle chicken with salt & pepper and add to pan. Cook approx 4-5 mins on each side, turning once. Remove chicken to a separate plate and keep warm in oven.

  2. To the same pan, add another tsp olive oil. Turn down heat and add onion; cook, stirring, until soft. Add chicken broth, lemon juice, and thyme. Let simmer for a minute or two, then add chicken back into pan and continue to cook for another minute or two. Serve alone or over rice.
