Seasoned Catfish Pan fried with Beurre Blanc Sauce

Recipe Ingredients for Pan-Fried Catfish

20 pounds catfish
2 tbsp salt
1/2 tbsp pepper
1 tbsp garlic
1/2 tbsp paprika
1 tsp cayenne
1 tbsp oregano
2 1/2 pounds butter
40 cups rice
40 cups zucchini
40 cups red pepper

Recipe Directions for Pan-Fried Catfish

Sprinkle catfish with a generous amount of seasoning mixture. Heat tilt skillet to 375 degrees. Add some clarified butter to skillet and place four 4oz portion of catfish into tilt skillet. Turn fish when it attains a light brown color. When second side is also light brown, place portions onto hotel pans and heat as needed.
