Recipe Ingredients for Pan-Cooked Greens with Tofu and Garlic

16 ounces firm tofu
1 1/2 lbs kale
3 tbsp peanut oil
3 tbsp soy sauce
1/4 tsp red pepper flakes
1 tbsp sugar
2 tbsp rice vinegar
3 cloves garlic
1 salt
1 black pepper

Recipe Directions for Pan-Cooked Greens with Tofu and Garlic

  1. If time allows, freeze the tofu and thaw it out before starting. Either way, squeeze the block of tofu between your palms over a bowl or sink. Be firm but not too enthusiastic; you want to push out some excess water without smashing the tofu. Cut into thin pieces and set aside. For the greens, cut the stems into one inch sections and roughly chop the leaves.

  2. Put a tbsp of the oil in a large skillet over high heat, add about half the vegetable stems, and cook, stirring frequently, until they are browned and slightly tender, 3 to 5 minutes. Remove to a bowl and repeat with the leaves. Remove. While greens cook, combine soy sauce, pepper flakes, sugar, and rice vinegar in a small bowl.

  3. Add a little more oil to the skillet and add the tofu; work in batches if the pan is too crowded. Cook, flipping them once, until browned on both sides, less than five minutes. During the last minute or so of cooking, add the garlic, return the greens to the pan, and stir. Turn off the heat, drizzle with the dressing, and toss again. Taste, add salt if necessary, and lots of black pepper. Serve hot or at room temp.
