hearty quick version from the traditional rolled and baked enchiladas.

Recipe Ingredients for Pan Chicken Enchilada

4 cups cooked chicken
15 oz tomato sauce
1 cup chicken broth
6 corn tortillas
1/2 cup onions
1 tbsp extra virgin olive oil
1 cup grated cheddar cheese
1/2 tsp salt
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp cumin

Recipe Directions for Pan Chicken Enchilada

  1. heat olive oil in large pan. Add onions and cook until translucent. Add cooked chicken, broth and spices. Cook on low until most of the liquid has been cooked off. Add tomato sauce. Simmer.

  2. Cut tortillas into 2" triangles. Fold into the chicken mix.

  3. Cook ten minutes more.

  4. Add cheese. Continue to eat until cheese melts.
