Yummy! My kids love these "cupcakes!" I don't tell them they're good for them!

Recipe Ingredients for Pam's Banana Oat Muffins

1 cup flour
1/4 cup sugar
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1 cup banana, mashed
1/2 cup oats
1/2 cup milk
1/4 cup butter, melted
1 egg, beaten

Recipe Directions for Pam's Banana Oat Muffins

  1. Combine first 7 dry ingredients, blend thoroughly. Make a well in center of mixture.

  2. In a separate bowl, combine remaining ingredients, stirring well. Add to dry ingredients, stirring just until moistened.

  3. Fill greased and floured muffin tins 2/3 full, or use paper liners.

  4. Bake at 425 degrees for 15 minutes, or until done. Yield: 12 muffins or 36 mini muffins.
