Recipe Ingredients for Pampered Chef Summer Tortellini Salad

9 oz Cheese Tortellini
1 medium Squash, Summer, Zucchini, Includes Skin
2 tbsp Parmesan, Grated Cheese
1 oz Carrots
1 Serving Tomatoes
1 serving Green Onions
1 oz Parsley
2 tbsp Fat Free Ranch Dressing

Recipe Directions for Pampered Chef Summer Tortellini Salad

  1. Cook Tortellini according to pack directions. Drain and rinse with cold water. Leave in colander to dry.

  2. Meanwhile, thinly slice (1) zucchini, chop carrots, cut tomatoes (pint) in half and thinly slice (3) green onions. Snip parsley and grate parmesan cheese. Mix veggies in bowl. Add Tortelini. Pour salad dressing over salad & mix gently. Add parm. cheese and mix gently. Cover and refrigerate at least 2 hours or more before serving.
