Recipe Ingredients for Pampered Chef Quick Chicken Primavera Risotto

1 lb boneless skinless chicken breasts
1/4 cup lemon juice
1/2 onion
1 clove garlic
17 ounces brown rice
1 medium carrot
1 medium zucchini
2 plum tomatoes
2 cups chicken broth
1/2 cup grated parmesan cheese
1/4 cup fresh basil leaves
2 ounces cream cheese

Recipe Directions for Pampered Chef Quick Chicken Primavera Risotto

  1. season chicken with salt and pepper.

  2. pre-heat large skillet for 5 minutes. add chicken and lemons.

  3. cook 6-8 minutes, or until cooked through, turning once halfway through cooking.

  4. remove and cut into 1/2 inch cubes.

  5. spray skillet with oil. cook onion and garlic 4-6 minutes.

  6. add rive and juice from carmelized lemon halves; cook and stir for 3-4 minutes.

  7. add carrot, zucchini, tomatoes, and 2 cups broth. bring to a boil. reduce heat to medium, and simmer 4-5 minutes until broth thickens.

  8. stir in chicken and cook until heated through.

  9. remove risotto from heat. add asiago and basis; stir until cheese melts and sauce thickens. stir in cream cheese.
