Recipe Ingredients for Pammy's roasted ratatouille

1 large onion, diced
1 red pepper, diced
1 yellow pepper, diced
2 courgettes, sliced
250 g mushrooms, quartered
1/2 tbs olive oil
1/2 tbs balsamic vinegar
400 g tomatoes, canned in juice

Recipe Directions for Pammy's roasted ratatouille

  1. Make the marinade: mix olive oil and balsamic vinegar together.

  2. Toss the vegetables (except the tomatoes) in the marinade and put in one layer on a baking tray (line the tray with foil first).

  3. Bake at 180 degrees C for 20 minutes.

  4. Put the cooked vegetables in a saucepan with the tomatoes, add herbs to taste, and heat through. (Can also add a tin of drained and rinsed kidney beans here but remember to add the extra calories.)

  5. Serve with pasta and a little grated parmesan (again, add the extra calories).
