Chicken in a creme fraiche (sour cream) and mustard sauce.

Recipe Ingredients for Pammy's dijon chicken

500 g chicken breast, cubed
1 tbs olive oil
1 onion, peeled and sliced
1 clove garlic, peeled and chopped
1 zucchini, topped and tailed and chopped
450 ml water
2 tbs low-fat sour cream
1 tsp dijon mustard

Recipe Directions for Pammy's dijon chicken

  1. Heat oil in large skillet, add onion and garlic, cook until softened.

  2. Add chicken breast and mustard (NB wholegrain is nicest here but couldn't get the analyser to recognise it!). Brown the chicken breast.

  3. Add the zucchini and water, simmer for 20 minutes.

  4. Stir in the sour cream (creme fraiche), heat very gently (otherwise it splits).
