Recipe Ingredients for Pam' faux pizza

8 oz eggplant
2 oz onion
2 oz bell pepper
1 oz mushrooms
3 oz pineapple
2 oz mozzerella
3 tbsp pizza sauce
2 tbsp parmesan

Recipe Directions for Pam' faux pizza

  1. Peel and slice into 1/2" slice the eggplant

  2. Cook eggplant slice for 15 minutes in pan with a little water @ 300 degrees.

  3. Take eggplant off pan, dry, and spray pan with some no stick spray.

  4. Place eggplant back in pan and cover eggplant with pizza sauce.

  5. Cover eggplant with rest of ingredients.

  6. Cook @ 425 degrees until cheese melts and browns slightly.
