Delicious paleo salad. Can be served hot or cold.

Recipe Ingredients for Paleo Sweet Potato, Bacon, Egg Salad

6 pan fried slices Uncured Bacon
2 egg Organic Eggs
1 medium (2" dia, 5" long, raw) Sweetpotato
2 tbsp Light Mayo, Organic Vegan
5 sprigs Dill Weed, Fresh
5 tbsp chopped Onions
1 lemon yields Lemon Juice

Recipe Directions for Paleo Sweet Potato, Bacon, Egg Salad

Hard boil eggs. While eggs are cooking, dice up raw bacon and fry in pan. Add diced onions and continue to cook. Cut sweet potato into small 1/4" bits and add to pan. Cook until sweet potato is soft. Rinse eggs in cold water and peel. Slice into small pieces and add to pan. Continue cooking over low heat. Meanwhile, mix 2 T mayo, lemon juice and fresh cut dill weed and a dash of salt. Mix in with pan ingredients. Yields 2 servings. Serve hot or cold.
