a great Paleo-diet stew. for you health nuts its also free of added sugar and gluten. give it a try -- loaded with meats, greens, mushrooms, roots and delicious fats, moderate low GI starch content. vegetarians beware

Recipe Ingredients for paleo stew

2 sweetpotato, 5" long Sweetpotato
0.25 cup Butter
1 medium (2-1/2" dia) Onions
15 cloves Garlic
3 leg, bone removed Chicken, Leg
16 oz Beef, Top Sirloin
3 medium slices, cooked (raw product packed 20/lb) Pork, Cured, Bacon
0.5 cup slices Parsnips
16 oz Lamb, Ground
2 cup, chopped Carrots
14 oz Vegtable With Beef Stock Condensed Soup
15 serving Tomatoes Diced No Salt Added
3 cup, chopped Kale
3 cup, whole Mushrooms

Recipe Directions for paleo stew

  1. render bacon in a good soup pot, remove and chop

  2. add butter (i use homemade ghee) to bacon fat

  3. heavily brown all meats in the fat, removing to a separate plate/bowl when well browned

  4. add mirepoix to pot, sautee and bring those brown bits up.

  5. add bacon to mirepoix

  6. deglaze with stock, add herbs (go nuts, i use thyme rosemary bay leaf mustard powder cayenne and cumin & pepper)

  7. add tomatoes - use good quality canned ones or a few cups of fresh

  8. add all the root crops

  9. add all the meats back to pot. chicken legs should be added raw - the skin gets weird when baked before. fill to the brim with chopped kale and cover.

  10. once kale has stewed for a bit, check broth level, it should just cover everything. adjust with water if necessary. season to taste

  11. cover and cook for as long as you want. i let it go at least 4-6 hours on low, let stand in fridge for a day and reheat.
