Recipe Ingredients for paleo pumpkin muffins

1 1/2 cups almond meal
3/4 cup canned pumpkin
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp pumpkin pie spice
1/8 tsp salt
1 tsp vanilla extract
3 eggs
1/4 cup maple syrup
1/2 cup dried cranberries
1/2 cup pecans

Recipe Directions for paleo pumpkin muffins

  1. preheat oven to 350 F

  2. combine dry ingredients

  3. add eggs/vanilla

  4. add pumpkin puree

  5. add maple syrup

  6. add nuts/cranberries

  7. scoop into lined (or well-greased) muffin tins . . should make at least 6 muffins

  8. bake for 20-25 minutes
