Recipe Ingredients for Paleo Carrot Banana Muffins

2 cup Almond Meal/Flour
2 tsp Baking Soda
1 tsp Sea Salt
1 tbsp Cinnamon, Ground
1 cup Pitted Dates
3 medium (7" to 7-7/8" long) Bananas
3 large Egg, White
1 tsp Vinegar, Cider
1/4 cup Vegetable Oil, Coconut
1 1/2 cup, chopped Carrots
3/4 cup Raw Walnuts

Recipe Directions for Paleo Carrot Banana Muffins

  1. 1.Preheat oven to 350℉.

  2. 2.In a small bowl, combine almond flour, baking soda, salt and cinnamon.

  3. 3.In a food processor, combine dates, bananas, eggs, vinegar and oil.

  4. 4.Transfer mixture to a large bowl and blend until completely combined.

  5. 5.Fold in carrots and walnuts.

  6. 6.Spoon mixture into paper lined muffin tins.

  7. 7.Bake at 350 for 25 minutes.
