Croatian Crepes with Strawberry Preserves

Recipe Ingredients for Palacinke

1 c. milk
3 tbsp. butter
1 c. flour, sifted
1 tsp. baking powder
1/2 tsp. salt
2 eggs, beaten
1/4 c. sugar
8 tbsp strawberry preserve
1/4 cup powdered sugar

Recipe Directions for Palacinke

Heat milk and butter in saucepan. Cool slightly. Sift flour, baking powder, sugar and salt together. Combine milk mixture, eggs and dry ingredients. Beat until smooth. Batter will be thin. Let batter stand at least 2 hours. Heat a 6 inch skillet, grease lightly with a piece of bacon rind. Pour 1 tablespoons batter in skillet to make a thin pancake. Turn when golden brown. (Can also use crepe pan). Fill with 1 tablespoon strawberry preserve (jam) and roll. Sprinkle powdered sugar lightly on top of crepe. Enjoy!
